A sweet & savory recipe.
If you’re new to my blog, one thing to know about me is on posts like this – so most of my posts at the moment – you’re not going to get some long, whimsical, bullshit story. So, let’s get to it!
Ingredients
What I love about this recipe is how customizable it is! Using puff pastry is ideal, however, when I was shopping for this recipe, the grocery store was completely out of it. I had zero desire to make my own or go to other stores just for that one item, so I made an in-the-moment decision to take a risk and try crescent rolls which fortunately worked out rather splendidly.
Note: the puff pastry recipe varies (aka more steps, more time) from the crescent rolls; the steps for puff pastry are below the steps for the crescent rolls.
- Crescent Rolls: these bites are about the size of a crescent roll, so base the number of servings on whatever the package says.
- Alternate – Puff Pastry: if you go this route and the store is out, click on this link for a homemade puff pastry recipe. This is a website I am not associated with; I have not tried the linked recipe.
- Cranberry sauce: canned (jellied) works best but if you choose a different option, make sure to only use the sauce (no berries) as filler. Reason being is the brie won’t hold correctly. You’ll see what I mean in the video below.
- Alternate – Raspberry jam (seedless)
- Brie cheese
- Thyme: it’s imperative to use fresh sprigs as opposed to the dried in the spice jar variety.
- 1 Egg: this is to make egg wash. You will only need this if you go the puff pastry route.
- Tools: baking sheet, parchment paper (optional), cutting board, knife, spoon
The Recipe
I prefer to prep my ingredients first and place them in the order I use them on my workspace.
Step 1: Preheat
Preheat the oven per the instructions on the crescent rolls tube (375 degrees Fahrenheit). If you are using puff pastry, preheat the oven to 400 degrees Fahrenheit.
Step 2: Assemble
Crescent Rolls Instructions:
You’ll need to work the dough a bit to stretch it out so you can make the individual bites. You can do this to the dough while it’s tube-shaped or cut individual slices and work each one individually. Looking back, the latter may have been the easier option.
What not to do: don’t use a rolling pin. I tried and it was just pointless.
Each piece needs to be in a relatively square shape in order to properly make the bite.
Step 3: The Fold
Ok, this part is a little tricky. Frankly, it took me a few tries especially since I have a hand tremor due to my neurological condition which was particularly bad the day I made these. Please be patient with yourself! Likewise, each piece does not have to be identical to one another.
Here’s the breakdown:
- Fold one square into a triangle
- Take your knife and make a diagonal cut along the bottom (base) of the triangle on the right side. The goal is to create a diamond shape in the middle once the triangle shape is unfolded. The cut should go roughly half way towards the top of the triangle; you will cut all the way through. Repeat on the left side.
- Unfold the cut triangle back to the square shape.
- As delicately as possible, take the right side and fold over the center (diamond), tucking the tip underneath the left side. Repeat on the other side (excluding the fold).
This was hard to explain so I’ve included a slow-motion video. Watch as many times as you need!
Step 4: Jam Time
Once all of your pieces are folded, layer in this order:
- Scoop of cranberry sauce or jam (just enough so it’s not overflowing)
- A cube of brie (cut the rine first!)
- A sprig of thyme in the center of the brie
Step 5: Bake & Wait
Bake in the oven per the instructions on the crescent rolls tube
Step 6: Indulge
Serve warm and enjoy!
Alternative: Puff Pastry Instructions
- Defrost the puff pastry in the fridge.
- Once thawed, use a floured rolling pin to roll out the pastry.
- Using a knife, cut the puff pastry into 12 squares.
- Build the foundation: cut and fold the puff pastry into the shape of your choosing. For this recipe, check out the video in Step 2 to see how I folded it.
- Chill the folded pieces in the refridgerator for 10 minutes.
- Brush the pieces with egg wash (1 egg, beaten, with a splash of water).
- Place in the oven for 10 minutes.
- Once removed from the oven, layer in the ingredients – cranberry sauce or jam, cube of brie, sprig of thyme on the center of the brie.
- Bake in the oven an additional 5 minutes
- Serve while warm!
